Whenever I visit a seafood restaurant or tavern, I always make sure to order crab cakes or jalapeno poppers. There's something so irresistible about the combination of spicy jalapenos and the rich, succulent taste of crab meat. That's why my husband decided to surprise me with his recipe for Crab Stuffed Jalapeno Poppers, which combines my two favorite appetizers into one mouthwatering dish.



The recipe is inspired by the famous Maryland-style Crab Cake, which my husband learned to make during his time in Baltimore. The best part is that this recipe is baked, not fried, making it a healthier and more diet-friendly option. The blend of cheeses and cream cheese creates a smooth, creamy texture, while the crispy bacon topping adds a satisfying crunch. And since these poppers are baked, there's no need for breadcrumbs or any other kind of breading.



This year, I decided to try my hand at gardening and learn how to grow my own vegetables. One of the first things I planted was jalapenos, and to my surprise, I ended up with a bountiful harvest of beautiful, plump peppers. I couldn't wait to use them in my cooking, and the flavor was so much more vibrant and fresh than anything I'd ever bought from a store.

Ingredients

20 - 30

fresh jalapeno peppers, or you can use mini yellow, red, & orange bell peppers.

2 - 8 oz.

block of cream cheese softened

1 1/2 cup

shredded Mexican cheese blend or any cheddar cheese

1/2 cup

fresh parmesan cheese

1 -16 OZ

cans of crab meat, drained well, or fresh crab meat

zest and juice of ½ lemon

1/4 tsp

fresh ground black pepper

1/2 tsp

garlic powder

1 cup

chopped green onion

1 tsp

old bay seasoning

1/2 cup of bacon

How to Make Crab Stuffed Jalapeño Poppers



Cut stems off jalapenos; remove seeds and membranes; set aside.


In a small bowl, beat the cream cheese and mix the other ingredients. You want to add the crab last

Transfer to a resealable plastic bag; cut a hole in a corner of the bag. Pipe filling into jalapeños.




Place on an ungreased baking sheet. Bake at 350° for 40-50 minutes or until peppers are crisp-tender.
