Sausage and Pepper Skillet

Updated: Dec 19, 2023

A Low-Carb Sausage and Peppers Skillet Recipe

I love one-pan dinners! They're so convenient and perfect for those busy nights when you want something quick and effortless. Recently, I challenged myself to create a few recipes that are just as easy as fast food.

If you're looking for a tasty and hassle-free meal, try this beef smoked sausage and peppers recipe. It's super easy to make, and you only need one pan, so cleaning up is a breeze. You'll enjoy the delicious combination of sautéed sweet peppers and onions, juicy sausage chunks, and flavorful Italian seasoning and garlic.

What Kind of Sausage to Use?

Any sausage you prefer! Use Italian sausage, kielbasa sausage, smoked sausage, andouille sausage, and even chorizo! They all work perfectly in this recipe. Just make sure it's the pre-cooked type of sausage you just heated and not the fresh link. Most grocery stores sell pre-cooked sausages, commonly found in brands like Hillshire Farm, Johnsonville, and Aidells.

Ways To Serve Up Sausage and Peppers

I almost always serve mine with fried eggs and breakfast potatoes, which never get old! This recipe goes so well with a dish to make a complete meal. However, other ways to enjoy this recipe include:

Rice: You can make it a nice hearty meal

Hoagie Rolls: Turn it into a sandwich situation + serve it over a soft, toasty hoagie!

Broccoli: Vegetables work great as a low-carb option.

Pasta: Add it to your favorite pasta or egg noodles.

Side Salad: Another fantastic, healthier side option!

Creamy Risotto: Make it super tasty and make risotto.

Garlic Bread: These sausages and peppers would be excellent with garlic bread!

What You’ll Need

Sweet peppers are a big part of this delicious recipe, and you can use any color you like—I like to use a trio of colors for an extra-festive presentation.

1/2 tsp Garlic Powder

2 cups sweet peppers

One package of Sausage You’ll need about 12 to 14 ounces, cut into thin rounds (between ⅛-inch and ¼-inch thick).

1 Medium White onion

1 tbsp. For sauteing the food, have two tablespoons of olive oil ready, divided.

One bush of Scallion

Two shallots

1/2 tsp Black Pepper for a bit of spice

½ tsp Italian Seasoning: This versatile seasoning blend adds flavor! About a teaspoon is perfect for seasoning the skillet.

How to Make Sausage and Bell Peppers in a Skillet

The secret to this recipe is cooking the sausage and vegetables together. Talk about unique flavors!

Heat a tablespoon of olive oil in a large skillet over medium heat.

Add the sliced sausages and vegetables and cook them until their sausage is nicely browned and your vegetable is crisp, tender, and a little charred, stirring and turning occasionally. The cooking time should take about 10 to 15 minutes. In the last 2 minutes of cooking time, you want to add your seasoning.

Taste the dish for correct seasoning and adjust if needed. Garnish with pepper flakes and green onions.

Serve your sausage and pepper skillet as-is or arrange it over rice or potatoes.
