With so much going on with the Covid, many of our favorite restaurants were closed, so we had to start being creative in the kitchen and start making and growing our foods. As some of my faithful readers know, I started a garden. It was my first-time planting anything. Let me tell you; it was so relaxing and exciting to see what you produced growing into fruits and vegetables. So, all the ingredients except for the avocado come out of my garden in This Guacamole recipe. It was stimulating to go into my backyard to pick out my vegetable to cook our nightly dinners. The key ingredient to making the best homemade guacamole is the combination of tomato, cilantro, and lime. If you are not creating with those components, then your Guacamole will turn out very bland.

Ingredients

Produce

3 Hass Avocados, Ripe

2tbsp Cilantro

1 tsp Garlic powder or fresh garlic

1 Lime, Juice of

1 Tomato, small

3 tablespoons finely chopped red onions.

Condiments

Baking & Spices

1/2 tsp Salt

Other

1 Jalapeno (stems and seeds removed and chopped (optional)

The first thing you will want to do is chop up your cilantro, tomato and red onion then set them aside.

Next, you will want to cut open your avocado and remove it from the peel.

I like using OXO Good Grips 3-in-1 Avocado Slicer - Green; it’s an All-in-one tool that splits, pits, and slices avocados. It’s the safer way to open an avocado. Trust me; the Hubby had to patch me up after a couple of times cutting myself. But if you are using a knife, pull the avocado apart by gently twisting. You will see the large pit in the middle. With your chef's knife aimed at the avocado pit, carefully hit into the pit using enough force that the blade does not slip. Then, twist the knife to pull the pit out.

Mash avocado slightly in a large bowl using a fork. Add lime juice, salt, and garlic powder and continue mashing to desired consistency.

Stir in the onion, cilantro, tomato, and jalapeno.

Taste and season, as necessary.

Serve immediately or cover the bowl with plastic wrap and refrigerate.

HOW TO KEEP GUACAMOLE FROM TURNING BROWN:

Guacamole can be prepared ahead of time, and there are a few tips to keep it from turning brown before serving. Once guacamole is mixed up, it should be eaten within 24-48 hours. Sealing your guacamole as tightly as possible with plastic wrap is a great way to keep it from turning dark.

A great tip is to add the avocado pit into the guacamole until time to serve your guest! cover tightly with plastic wrap and chill.
