Grilled Zucchini and Squash





The season's plentiful summer squash come together in a tasty summer side that cooks up in under 20 minutes.


This simple and super easy Grilled Zucchini and Squash recipe only requires seven ingredients, five of those ingredients you usually would have in your pantry, and it only takes 20 minutes to prep and cook. If anyone comes to visit during summer, then the chances are that they’ve tried this grilled zucchini. It’s one of my family’s signature dishes served up alongside HERB MARINATED LAMB CHOPS or Grilled Salmon Topped with Orange Maple Glaze This grilled zucchini (and squash) also makes for a super versatile side dish with a simple garlic, salt, and pepper flavoring – that way, it’ll go with everything!




One thing the pandemic has taught me is how to grow my fruits and vegetables. When the world seems like it was coming to an end, grocery stores were constantly running out of food. I didn’t want to be without fresh fruits and vegetables, so one day, I went to YouTube and watched six hours of videos on how to start a garden, the very next day, I went to my local Garden store, picked up some seeds started growing my garden. After having a successful firsts year as a Gardner, I stepped it up a notch. I began an experiment with the vegetable that was more difficult to grow, and this is how I’m sharing with you guys this simple but pack with many flavors and tasty Grilled Zucchini and Squash recipe. Anything you put on the grille always brings out the best flavors in a dish.


Three ways to cut zucchini and squash for grilling

If you cut diagonally or “on the bias,” you get larger, most exciting shapes.


Planks. You also can cut the vegetables

widthwise into long planks: see this grilled zucchini.


Rounds. You can slice the zucchini and squash into 1/4-inch-thick rounds.


Ingredients for grilled zucchini and squash

2 medium yellow squash, cut into 1/4-inch-thick slices

1 Large zucchini, cut into 1/4-inch-thick slices

1/2 teaspoon Garlic Powder

1/4 teaspoon Coarse Pepper Black

1/4 teaspoon Sea Salt Sea Salt Grinder

1 /2 Onion Powder

1 Tablespoon Olive Oil

Spray of Olive Oil (I’m using Pam) this is for the mat


How to Grill Zucchini to Perfection:



Prepare the zucchini: First thing you want to do is clean and chop the zucchini. First, chop off both ends, then slice them in half (or sliced, quartered, or coined based on the size of the zucchini and summer squash).



Season the zucchini: Find a dish with a lid that will fit the zucchini piece

Then add the zucchini pieces and oil, seasoning to the dish, close the lid, and give it a good shake until all the vegetables are evenly coated. On The Other Hand, you can brush each slice with the seasoning – but it will take longer that way.



Grill the zucchini: Preheat a grill to medium-high heat (375 to 450 degrees Fahrenheit). Using an outdoor grill, spray your grilling mat first, then place your zucchini and squash on a grilling mat grill the pieces covered for 4-5 minutes, then flip and cook uncovered for 2-3 minutes.
